Best Vegan Hollandaise

This Hollandaise goes wonderfully on a tofu Benedict or mixed into a vegan Alfredo sauce. I also use it all the time as a layer in my vegan lasagna.


Combine all ingredients in Vitamix or similar blender to puree:

  • 2 Cups cashews
  • 1 Cup water
  • 1 lemon
  • 2 squirts Dijon mustard
  • 2 TBS nutritional yeast

Optional Add-ons:

  • To make it thinner, add soy milk
  • To give it some zing, add apple cider vinegar
  • To make it richer, add vegan butter
  • To make it more realistic-yolk-y-looking add turmeric for yellow color
  • To give it some kick, add a pinch of cayenne
