Best Vegan Hollandaise
This Hollandaise goes wonderfully on a tofu Benedict or mixed into a vegan Alfredo sauce. I also use it all the time as a layer in my vegan lasagna.
Must-Includes
Combine all ingredients in Vitamix or similar blender to puree:
- 2 Cups cashews
- 1 Cup water
- 1 lemon
- 2 squirts Dijon mustard
- 2 TBS nutritional yeast
Optional Add-ons:
- To make it thinner, add soy milk
- To give it some zing, add apple cider vinegar
- To make it richer, add vegan butter
- To make it more realistic-yolk-y-looking add turmeric for yellow color
- To give it some kick, add a pinch of cayenne
